Pizza Braid

Senang sangat buat dia. Beli je kulit puff saiz besar (ada dijual dipasaraya besar). Ambil sekeping, then sapu sos tomato, lapiskan dengan hirisan sosej.

Then lipat mcm gambar diatas (cara lipat boleh rujuk video dibawah). Sapukan kuning telur diatas permukaan. Then bakar untuk 30 minit dengan suhu 180C

Bila dah bakar, rupanya jadi camni.

Nak senang faham, tengok video clip dibawah:

Chicken Puff

Guna pastri frozen Kawanku, penyediaan chicken puff ni tak lah susah mana.

Untuk inti ayam, resepinya:

Isi ayam - saya guna bahagian dada, yang dipotong kecil2.
Sayur campur frozen
2-3 ulas bawang putih - cincang
1/2 biji bawang holland - cincang
Serbuk lada hitam dan garam secukupnya
1/2 cawan sup cendawan - saya guna mushroom soup Campbell.
Kulit pastri secukupnya.

Tumiskan bawang putih dan bawang holland sampai naik bau. Masukkan isi ayam. Biarkan sampai masak. Kemudian masukkan sayur campur. Kacau sebati. Masukkan sup cendawan. Biarkan sampai kuah pekat.

Sebelum masukkan puff, pastikan oven dipanaskan dulu sekurang2nya selama 10 minit.

Pizza Segera

As a busy working mother, tapi still berazam nak sediakan juga bekal makanan anak2 ke sekolah, saya sentiasa berfikir menu yg sedap, ringkas dan juga sihat utk disediakan.

Anak2 pon teruja sbb nampak mcm real pizza...hehehe. Saya dah sharekan cara buat pizza kat FB saya dan kawan2 pon suka the idea of making pizza cara ini.

Actually saya penah tgk org buat pizza guna tortilla so masa sy nampak roti arab di Tesco, saya terfikir la nak buat pizza guna roti arab ni.

Cara nak buat amat la mudah. Tapi sementara nak sediakan pizza tu, panaskan dulu oven pada suhu 180C. Saya guna api atas sahaja.

Saya gunakan capsicum 3 -colors, sosej, lebihan nugget ayam yg dah siap digoreng,
sos tomato dan cheese sebagai topping

Sediakan roti arab diatas tray pembakar.

Sapukan sos tomato atas roti arab

Taburkan sedikit keju parut diatas lapisan sos tomato. Ini supaya topping melekat pada permukaan roti.

Lepas tu susun2 la bahan2 topping ikut suka dan tabur cheese akhir sekali. Saya punya second bread tu guna sliced cheese aje sbb grated cheese dah abis.

Bapak budak pon mkn sikit aje sbb masa saya bawa balik roti jala, nasi impit, kari ayam ,kuah kacang dan rendang itik - lebihan makanan masa meeting hari tu. So dah makan benda2 tu, roasted chicken x bape laku.

So what I did, de-boned the chicken meats dan tulang2/kulitnya saya rebus utk buat chicken stock. Isi ayam tu saya buat mcm2 for Saturday morning breakfast -chicken sandwich guna baguette dan bruschetta.

Ada home-made mango yogurt drink, mushroom soup (Campbell can),
chicken sandwich, buah2an dan bruschetta. Nanti I come out
with individually entry for each item (except for mushroom soup la...hehehe)

I simmered the bones and fats for 2-3 hours dan dapat la chicken stock
yg siap ada rempah ratus :). Boleh buat mcm2 dgn chicken stock ni.

Savory Breakfast Muffin

One of the missions this year - makan secara sihat dgn bahan2 yg sihat. Secara beransur2, sy dah beralih kepada whole-meal ingredients. Selain beras merah, sy guna tepung whole-meal jugak utk buat pancake, cucur dan muffins. Tapi xde la all the time sbb budak2 ni agaknya tau perbezaan rasa antara tepung putih dan whole-meal, jadi x berapa nk mkn sgt. Beras merah tu pon jenuh pujuk suh mkn. So kena la masak selang-seli.

Savory muffins ni sy buat utk breakfast. Rasanya agak bland sikit, maybe sbb garam sikit sgt. Tapi sedap bila dicicah ngan sos cili.

Resepi ni sy amik dari website mana tah, lupa nk take note the link.

Bahan2:

2 cawan tepung whole meal
1 cwn tepung gandum serbaguna
1 sudu besar baking powder
1/2 sudu teh soda bikarbonat
1/2 sudu teh serbuk lada hitam
1/4 sudu teh garam
2 biji telur
1 1/3 cawan buttermilk (boleh guna susu biasa + 1 sudu cuka dan dibiarkan dlm fridge utk semalaman)
3 sudu besar minyak zaitun (extra virgin olive oil)
2 sudu besar mentega - dicairkan
1 cawan daun bawang - porong halus
3/4 cawan sosej yg dipotong dadu
1/2 cawan keju parut
1/2 cawan capsicum merah yang didadu

Cara2:

1. Panaskan oven pada suhu 180C.
2. Satukan bahan2 kering (tepung2, garam) dan gaul rata.
Tapi sapukan dulu minyak masak terlebih dulu so muffin x melekat bila dah masak. Sy tabur extra cheese on top of muffin nk bagi lagi cantik and cheessy.
7. Bakar selama 20 minit.

Bread Casserole

Di suatu pagi, saat kebuntuan tak tahu apa nak buat utk sarapan dan tgk roti sandwich ada lagi separuh buku dgn tarikh lupus hampir nak tiba, terfikir nak buat bread casserole seperti resepi INI.

Tapi since bahan2 tak cukup nak ikut resepi asal, belasah la apa sahaja yg ada dlm fridge. Antaranya separuh pek cendawan butang, separuh pek salami, spring onion, tomato, susu, telur dan shredded cheese.

Bahan2:

6 keping roti sandwich (sy guna jenis whole-meal)
2 cwn susu
4 biji telur
100g cendawan butang - dihiris nipis
1 btg daun bawang (spring onion) - dipotong halus
2 biji tomato - didadu kecil
1/2 pek kepingan salami - dipotong sederhana besar
sedikit daun thyme atau oregano kering
garam dan lada sulah secukupnya
parutan keju secukupnya.

1. Panaskan oven pada suhu 200C
2. Carikkan kepingan roti sandwich kecil2 dan letak dlm satu mangkuk besar.
3. Pukul telur bersama dgn susu, garam, lada sulah dan daun thyme. Tuangkan kedlm mangkuk berisi roti. Biarkan roti terendam dlm campuran susu utk 5 minit.
4. Kemudian masukkan cendawan butang, salami, spring onion & tomato ke dlm mangkuk roti. Kacau sebati dgn campuran roti, telur & susu
5. Tuangkan kedalam bekas casserole yg disapu dgn sedikit minyak. Kemudian tuangkan campuran tadi kedlm bekas casserole.
7. Bakar selama 20 minit atau sehingga golden brown (sy terbakar lama, so bahagian atas hangit)

Cinnamon Rolls

Ini adalah resepi yg dah tersimpan sekian lama dlm my cooking wish-list. Tak suka pon sebenarnya cinnamon rolls tapi asik geram nak try buat.

As for me, since ada breadmaker yg menyenangkan kehidupan, sy campak aje semua bahan2 dlm breadmaker, select "Teig Kneten" (preparation doh). Sy start buat mlm sebelum tido, esok bangun pagi, cuma keluarkan doh yg dah naik, canaikan mengikut procedure, tabur filling, gulung, kemudian potong dan bakar.

Senang kan?

For recipe (tanpa guna breadmaker)

Ingredients:
  • 550 g flour
  • 25 g fresh yeast , or 8.5 g of dry yeast
  • 70 g melted butter
  • 210 ml milk
  • 75 g sugar
  • 2 eggs
  • 1 pinch salt
  • 1 tbsp cinnamon
  • 200 g brown sugar
  • 85 g butter kept at room temperature
  • 1 egg
  • 2 tbsp milk
  1. Step 1: Begin the dough

Start by adding the flour, the yeast, the sugar, the salt, the eggs, the milk, and the butter into the mixer. Mix the ingredients on low for 5 minutes until it becomes shiny in appearance. Add about 2 Tbsp more of flour to the bowl and turn off mixer. Now scrape the dough from the hook.

  2. Step 2: Knead and let the dough rise

Put a little flour inside the bowl and also sprinkle some on your work table. Now knead the dough briefly. Add a little more flour to the bowl and sprinkle a little onto the dough. Return the dough to the bowl. Cover it and let it rise for about 1 hour or until it has doubled its size.

  3. Step 3: Make the filling

While the dough is rising you can place into a bowl the brown sugar, the cinnamon, and the butter and mix with a spoon until combined. Now set it aside.

  4. Step 4: Preheat oven to 185°C

You can now set the oven to 185 degrees Celsius.

  5. Step 5: Roll the dough

Punch the air out of the dough. Sprinkle the work space with flour and place the dough on it. Sprinkle the dough with some flour. Now roll out the dough to a 1/2 cm thickness, making sure there is enough flour to prevent it from sticking to the table.

  6. Step 6: Shape the rolls

You can now spread the filling on the dough. Carefully roll the dough into a log and cut it into slices of about 3 cm in thickness. Place them on the lined baking tray, leaving enough space for the rolls to rise. Allow them to rise for 15-20 minutes.

  7. Step 7: Wash and bake

Take your egg wash and using your brush, paint each roll individually. Put the tray into the oven and let them bake for 12-15 minutes.

  8. Step 8: Cool and serve

Remove the tray from the oven and let the rolls cool a bit. Your Cinnamon Rolls are now ready to serve. They can be eaten cold but they taste especially good warm.

Buttermilk Pancake

Dah lama x buat pancake guna buttermilk, so mari layan buttrmilk pancake pulak. Resepi amik kat Joy of Baking. Kalau buat tebal mcm kat gambar atas tu and guna pan saiz 20cm, boleh dpt 4 keping pancake shj. Cukup la kami anak beranak sorang satu keping sbb sekeping pon dah tebal gebus. So kalau nak lebih, double the amount, ok!

Ingredients:
1 cup (140 grams) all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
2 tablespoons (28 grams) granulated white sugar
1 large egg, lightly beaten
1 cup (240 ml) buttermilk
3 tablespoons (40 grams) unsalted butter, melted
Plus extra melted butter for greasing the pan.

Methods:

1. In a large bowl whisk together the flour, baking powder, baking soda, salt and sugar.

2. In a separate bowl whisk together the egg, buttermilk, and melted butter. Add the egg mixture to the flour mixture, all at once, and stir or whisk just until combined. The batter should have some small lumps. Make sure you do not over mix the batter or the pancakes will be tough.

3. Heat a frying pan or griddle over medium high heat until a few sprinkles of water dropped on the pan or griddle splatter. Using a pastry brush, brush the pan with a little melted butter.

4.Using a small ladle or scoop, pour about 1/4 cup of pancake batter onto the pan, spacing the pancakes a few inches from each other. When the bottoms of the pancakes are brown and bubbles start to appear on the top surfaces of the pancakes (2-3 minutes), turn over. Cook until lightly browned (about 1-2 minutes).

Homemade Roti Canai

Dah lama x makan roti canai. Dulu masa kak Liza rajin bawak sy pi Gross-Gerau sbb dia & sy selalu ada urusan ngan office immigresen disitu, kami selalu singgah kedai Pakistan ni yg ada jual roti paratha frozen yg murah. 2o keping dlm 4 Euro gitu. Boleh la kalau compare ngan kedai Asia Ruesselsheim yg jual 5 keping @ 1.59 Euro. Mahal tu!

Resepi cari kat Myresepi. Nampak mcm senang tapi susah jugak nak menghasilkan roti canai yg cantik. Doh adalah terlembik sbb tak ikut nasihat kalau guna breadmaker masa PAUSE kena bawa doh keluar dr breadmaker dan uli sedikit ngan tepung, pastu masuk balik dlm breadmaker. Takpe, learned from lesson..lenkali uli ngan tangan
all out.

roti canai yg huduh!

'Gordon Ramsay' kata:
" ni roti canai ke lempeng?"

Lempeng bang? Lempang kot....huaaaaaaaaaaa

Fruechte Scones (Fruit Scones)

Beli muesli ni nak buat sarapan pagi kononnya tapi nath berapa kali je breakfast muesli. Sebab muesli tak sedap...ngehngehngeh...

Apsal la makanan yg bagus utk kesihatan tak sedap selalunya?

Resepinya senang tapi dek kerana takde kesabaran nak deal ngan adunan melekat-lekit tu, sy pi tambah tepung, lalu scones ni keras berdengking, x lembut mcm scones yg sy buat ngan buttermilk hari tu.

Untuk resepi:
Source: Kotak Vitalis Fruechte Muesli

Bahan2:
400g tepung gandum
1 sudu teh (diratakan) garam
2 sudu teh (diratakan) baking powder
50g butter/marjerin
250ml susu segar
50g gula
100g fruit muesli

Cara:

1. Campurkan semua bahan dlm mangkuk besar kecuali susu. Adun dgn sebati, tambah susu sedikit demi sedikit sampai doh terhasil (u might not want to use the whole milk sbb nanti adunan melekat2). Canai doh setebal 1 cm dan tekap doh dgn acuan bulat bersaiz 5cm (sy guna bekas benjo, boleh guna cawan atau mangkuk kecil. Buat sampai semua doh habis.

Buttermilk Scones

Ini adalah breakfast dipagi Ahad lepas. Dah lama dah sy dok belek2 resepi buttermilk scones ni dlm siri buku BBC - Good Food 101 Cakes & Bakes. I have to try buat the recipes in all these 3 books...dah beli, kena la guna kan?

Scones is defines by Wiki as British quick bread. Sy ingat susah nak buat, rupanya senang aje tp for me still dlm kategori yg leceh sbb nak kena uli, then roll and then bake. So agak berkecah la dapur dgn tepung!

Scones ni sedap dimakan dgn strawberry jam dan whipped cream. Utk adunan 350g tepung dan saiz acuan benjo, sy dpt 20 biji scones! Banyak kan?

Utk resepi:

350g self-raising flour
100g castor sugar
85g butter, cut into small pieces
About 175ml buttermilk or natural low-fat sugar
Whipped cream & strawberry jam to serve

1. Preheat the oven to 180C. Mix together the flour and sugar in a bowl. Rub the butter in with fingertips until the mixture resembles fine breadcrumbs. Make a well in the centre of of the ingredients and tip in the buttermilk, all in one go, then mix lightly to form a soft dough.

2. Tip the dough out on to a lightly floured surface and knead briefly. Press the dough out to a 2.5cm/1 inch thickness, then stamp out 5 cm/2inch rounds with cutter. Gather up the trimmings, knead again briefly and stamp out more rounds.

3. Transfer the scones to a baking sheet, spaced a little apart and bake for 12-15 minutes until risen and light golden. Leave the scones to cool on a wire rack and serve with the whipped cream and jam.

Sausage & Apple Toad

Oh, lamanya x update blog ni. Ada la jugak try2 resepi baru tapi bila amek gambar, tgk gambar mcm hampeh, terus rasa malas nak update blog. Tapi resepi yg satu ni den masukkan juga la dlm blog walaupun buat seminggu lepas.

Ini resepi dr buku BBC GoodFood 101 - Healthy Eats. Senang resepi dia dan sy buat utk hidangan breakfast.

Resepi:

Ingredients:

1 tbs sunflower oil
4 half-fat sausages
50g plain flour
150ml skimmed milk
2 tsp wholegrain mustard
1 egg
1 apple, quartered, cored and sliced

1. Preheat the oven to 240C-220C. Brush a four-hole pudding tin (I used ramekins) with the oil, then place a sausage in each dip. Cook the sausage in the tin set over a high heat for 5 minutes or until browned.
2. Tip the flour into a bowl, season and make a well in the centre. Whisk the milk, mustard and egg together. then pour a third of the mix into the well. Gradually draw the flour into the milk to form a paste. Whisk in the rest of the milk mix to make a smooth batter.
3. While still over the heat, cut each of the sausages in half usinga pair of kitchen scissors. Scatter the apple slices among the four sausages in their dips. Pour the batter over. Take off the heat and bake in the oven for 20 minutes until risen and golden.

Vanilla Pancake

Pagi tadi sy bgn lambat...pening den x tau nak buat apa for a quick breakfast menu. Nak goreng nasi, nasi sejuk tak cukup. Nak buat toast, cik HB baru je semalam ckp x mo dah breakfast roti. Cik HB skrg pegi school awal, balik lambat sbb dah mula buat masterarbeit. So nak kena la layan selera makan dia sebaiknya, bukan saja ngan breakfast malahan lunch pon sy bekalkan sekali.....dgn harapan dia boleh buat keje ngan cemerlang dan kami boleh balik Malaysia cepat!!!! (tp cemana pon mmg kita sbg isteri kena la layan suami sebaik mungkin sepanjang masa kan?)

So punggah2 stok makanan, ada pek vanilla pudding segera...so mari buat vanilla pancake. Ni pon favourite cik HB. Pancake sy ni stail segera, campur 2 cwn tepung gandum, 1 biji telur, 1 peket vanilla pudding segera, 3 sudu besar gula & susu segar secukupnya (ikut kadar kepekatan yg dikehendaki), lepas tu masak atas non-stick pan dgn sedikit butter.

Hidangkan dgn madu atau sos coklat.

French Toast with Cheese

Dia pon suka. Nak buat pon sgt senang.

Cara nak buat: pukul 2 biji telur bersama sedikit susu, serbuk blackpepper dan garam. Ambil 2 keping roti toast ( sy guna yg whole meal - lebih berkhasiat!), nak guna American Sandwich pon boleh...letak sekeping cheese in between. Lepas tu celup dlm telur yg dah dipukul....celup full coated.

Panaskan sedikit minyak/butter/marjerin dlm pan, grillkan roti atas pan sampai golden brown. Cheese yg mencair tu akan membuat kepingan roti melekat.

Potong 2 dan hidangkan! Senang kan?

Onion, Tomato & Emmentaler Bruschetta

This is a type of appetizer originated from Italy - made from french loaf and variety of toppings. The topping can be anything up to your imagination but most of the recipe I checked from the internet uses tomato, onion, basil, cheeses etc.

So I decided mine to be of onion, cherry tomato and emmentaler shredded cheese. I cut the onion and cherry tomato into small cubes, put them in a bowl, toss the shredded cheese, juice from half a lemon, a little bit of garlic powder, a little bit of extra virgin olive oil, and a pinch of salt. Before that I preheated the oven at 200C. Then I sliced the french loaf into several pieces, rub one side of each pieces with olive oil, then put a generous amount of the toppings on one side then have them toasted in the oven for at least 5 minutes.

Typical recipe actually calls for the sliced loaf to be toasted separately before you put the toppings but I just love mine to be toasted with the toppings as I can have the cheese melted over the tomato and onion and make them stick together.

Doughnut French Toast with Strawberry Sauce

I'm back into Nigella Lawson again. Really love her cooking style. Simple yet so interesting. This one for example is very easy to make but the taste is so delicious. It is just a sandwich toast soaked in the mixture of egg and milk and then grilled with butter. After that, have both sides of the toast coated in granulated sugar. What makes it tastes so good when it is eaten with the strawberry sauce - made with fresh strawberries, blended together with some milk and sugar.

Go watch a clip of Nigella Lawson making this and tell me whether you are not tempted to have them too....

Onion Quiche

This is also something I got from Pillsbury.com. Very easy to make and delicious too. Actually I wanted to make Spinach Quiche but I didn't have frozen spinach at the time so I made my own version of quiche.

And this time, I used the ready-made croissant crust as shown in the video from Pillsbury.com. It's very innovative...I like it!

Ingredients:

- 1 pack of ready made croissant crust
- 1 onion - chopped
- 1 red capsicum - chopped
- shredded cheese
- 1 egg
- 1/3 cup milk

Method:

1. Preheat oven to 200C. Take a muffin pan, spray or rub the mould with a bit of oil to prevent sticking. Open up the croissant pack and lay the crust on a clean surface. Take one piece of croissant (triangle shape) and cut into three small triangle. Lay each small piece of triangle into each mould. Repeat the process for all pieces of crust.

2. Fill half of the mould with shredded cheese. Then a bit of onion, and capsicum. The amount of cheese, onion and capsicum can be varied depending on your likeness.

3. Beat the egg with the milk with a bit sprinkle of pepper. Pour the batter into each mould.

4. Bake the quiche for about 10 minutes or until it becomes brownish.

Mexican Scrambled Egg

I´m so into Nigella Lawson now. People said she´s not very much a cook since she´s not a trained-professional chef but I just love the way she cooks in her show. Sometimes she only cooks simple dish but it looks so delicious. And even though it is just a common meal, she´s very creative into adding something different in that meal.

This time I tried her Mexican scrambled egg....or I think I better call it Turkish scrambled egg because instead of using tortilla as in Nigella´s recipe, I used dürum. Dürum is a flat bread originates from Turkey and available in most Turkish groceries stores. It´s very much alike tortillas. If tortilla is used for making burito, dürum is used to make döner, just very much the same like burito, I guess.

Durum

Ingredients:

- 1 piece of tortilla/dürum
- 3 eggs
- a bit of spring onion (minced)
- 1 tomato (seeded and cut into small pieces)
- capsicum (cut into small piece)
- salt
-butter

Method:

1. Roll up the tortilla. Cut into portions of 1cm lengtfh.
2. Heat up some oil in a pan. Stir in the tortilla. Fry until golden-brown. Put aside.
3. Beat the eggs in a bowl. Add the spring onion, tomato, capsicum and salt.
4.Heat up some butter in a pan. Pour in the egg mixture and stir continuously to make scramble egg.
5. Toss in the fried tortilla.
6. Ready to serve.

Pizza Bread

Don't know what to serve for breakfast?

Try this quick-simple breakfast menu: Pizza Bread

I can't remember how I got to know this recipe but this is always my solution when I'm running out of idea what to make for breakfast.

All you need:

-sandwich bread
-tomato sauce
-beef/chicken salami or sausage - cut into small pieces
-onion - cut into small cubes)
-capsicum/tomato (optional) - cut into small pieces
-shredded mozarella cheese

Method:
1. Heat up the oven to 200C
2. Line the sandwich bread on baking tray (as many as you want)
3. Spread tomato sauce on top of the bread.
4. Put some onions, capsicum and tomato proportionally on top of the bread
5. Sprinkle shredded mozarella cheese on top.
6. Toast the breads in the oven for about 10 minutes (depending how much you want the bread to be toasted)
