Toffee Cake Squares


Since hari tu dah buat kek pilihan Nabihah, this time around we made kek pilihan Nabilah pulak. Selection were made from BBC Book - Cakes & Bakes. Nama asal kek ini sebenarnya Starry Toffee Cake Squares. Starry tu sbb ada star marzipan yg dihias diatas kek tu tapi since sy takde acuan bentuk bincang, maka x boleh la pangging Starry kan...instead kami ganti dgn bentuk bunga dan hati.

Bagus buat kek ini bersama anak2 sbb mudah dan budak2 boleh shape kan hiasan marzipan. Sy tak suka marzipan sebenarnya tapi mujur la ready-made marzipan x mahal kat sini. Buat kek ini tak payah guna mixer pon, so boleh bagi kat anak2 buat. Masa tgk amaun of sugar dan syrup dlm resepi, I was thinking like "mesti manis leting ni". Tapi bila dah siap dibakar dan makan, takde la manis mana. Sedap aje rasa.

Utk resepi:

Bahan2:

200g butter
200g golden syrup
300g self-raising flour
1 tsp salt
200g light muscovado sugar * i used Malaysian brown sugar
3 eggs
2 tbsp milk
225g yellow marzipan
read and green food colouring
icing sugar, for dusting

Method:

1. Preheat oven to 160C. Butter and line the base of a Swiss tin roll. Gently melt the butter and syrup in a pan, stirring to combine. Cool for 15 minutes

2. Sift the flour with salt and stir in the muscovado sugar (* I melt the brown sugar together with butter & syrup). Beat in the cooled syrup mixture. Beat the eggs and milk, and combine with the flour mixture until smooth. Pour into tin and level with spoon. Bake for 40-50 minutes until risen and firm in the centre. Leave in the tin to cool for 10 minutes. Tip on to a wire rack until cold.

3. Divide the marzipan into three colours; yellow, green & red. Roll out and cut out into star shapes. Cut the cake into small squares and decorate with marzipan shapes and dust with icing sugar.
